A great recipe that was passed along from a friend that I have been accustomed to making and eating after my workout.  Now I have made some changes to this recipe to make it a little cleaner.  I hope you enjoy it as much as I do!

  • 5 slices of cooked bacon and crumble – I substitute Turkey Bacon
  • 5 eggs – I use an egg substitute
  • 2 Green Onions chopped
  • 2 cups of shredded hashbrown
  • 1/2 cup fat free milk or Soy
  • 1 cup of cheddar cheese – 2% cheddar cheese
  • To spice it up, I include hot sauce

Preheat oven to 35o, Mix all ingredients together and hold out 2 slices of bacon and 1/2 cup of cheese.  Spray a 9 inch pan with Olive Oil, pour all into the pan and bake for about 30 minutes.  When the egg sets on top sprinkle the remaining bacon and cheese over top and wait until it melts and you are ready to eat.  Palm size portion!
