Fennel Bulb Recipe

Thanks to the folks at Clean Eating Magazine, I found this great side dish to pair with your favorite protein.

When you purchase this vegetable, it should be free of any brown or bruise spots and should resemble the image.

Ingredients:

  • 2 large fennel bulbs
  • Sea Salt Ground Pepper
  • 1 tablespoon olive oil
  • 1/2 cup grated Parmesan cheese

Cut the stalk and trim the bottom.  Slice in half, lengthwise and then                                          quarter each half or if you prefer smaller pieces slice them again.                                              Prepare a pot of boiling water and put the quartered halves in the pot                                      for about 10 minutes.  Once complete drain and let it cool slightly.                                             Preheat oven to 400.  Grab a casserole dish and put the fennel in the                                          casserole dish, sprinkle with sea salt, pepper, and 1 tablespoon of olive                                     oil and stir to coat.  Cover with foil and bake for 10 minutes.  Take the                                       foil off and sprinkle grated Parmesan cheese over the top and bake for                                      another 10 minutes.  Serve immediately.

This is delicious!
