New Recipe – Black Bean and Egg Scramble l Jeri’s Corner – Fitness & Food

Hi Guys –

I made this great breakfast this morning.  Compliments of Muscle & Fitness Hers May/June 2011 issue.  Enjoy!

2 Whole Eggs, 4 Egg Whites, 1 Small Roma Tomato Diced, 1 Small Jalapeno (seeds removed) chopped fine, 2/3 cup black beans (rinsed), 2 tbsp cilantro (rough chopped), 2 tbsp Queso Fresco Cheese or Crumbled Feta.

  1. Heat non stick pan on medium heat, Spray with cooking spray.  Add Jalapeno , Beans, and Tomato, toss until hot
  2. In a separate bowl, whisk eggs and whites together, then pour into pan with the rest of the ingredients.
  3. Carefully stir until eggs are cooked, not a hard stir
  4. Garnish with Cilantro and Cheese

224 Calories, 21g protein, 18g carbs, 7g fat, 6g fiber, 2g sugar, and 275mg sodium
