Shirataki Noodles

Shirataki Noodles are tofu noodles.  They are high in protein and have zero carbs which makes them an ideal replacement for regular noodles.  Depending on how you prepare them they can be a little spongy.  For this meal, I selected the smaller noodles because they do come in a few different sizes.

The best way to prepare them:

Once you open the package, the will smell fishy.  You will need to run them under hot water for about 5 minutes or so.  After a good wash, you will need to dry them off.  I just used some paper towels to press them dry.  Put a drop of olive oil in a saute pan until it heats up.  Saute the noodles for about 5 minutes on medium heat.  I purchased some Soyaki Sauce from Trader Joe’s, which has amazing flavors and put about 1/2 cup into the pan and cooked them for about another 5 min. or so. Once done, I put them in a bowl and refrigerated overnight so that the sauce would absorb in the noodle.

The second day, I sauteed the noodles in more Soyaki sauce about 1/2 cup and added my carrots and green onions until carrots were softened.  That’s all!  As you can see, I paired it with steamed broccoli and made Asian meatballs.

A fantastic meal!
