$25 Food Challenge Part 2 l Jeri’s Corner – Fitness and Food

The second meal of the $25 dollar challenge is a Beef Stir Fry.  Last week, I made a Vegetable Stir Fry.  I did have some carrots, green onions, and bean sprouts left over, so it was very easy for me to grab some broccoli, beef and Shirataki noodles.  My grocery bill was less than $10 dollars and I have $15 dollars to roll over to next week!

What you need:

  • 1 package beef strips for stir fry
  • Couple stalks of fresh broccoli florets
  • Shredded Carrots
  • Bean Sprouts
  • Green Onions
  • Red Pepper
  • Worcestershire Sause
  • Red Wine Vinegar
  • Honey
  • Garlic

Slice the beef strips into cubes and place in a bowl.  I did marinate over night using a generous amount of Worcestershire sauce, couple shakes of red wine vinegar and enough red pepper to make it hot.  Of course you can use as much as you can stand.

Day two, put beef cubes into a stir fry pan along with the juice on medium heat.  Cooked just enough to cook the meat and transferred to a bowl leaving the sauce in the pan.  Transferred carrots and broccoli into pan.  Sauteed until broccoli was bright green and still a little crunchy and removed from the pan.  Added the carrots and sauteed until carrots were soft.

Prepare the Shirataki noodles while the carrots are sauteing. Wash them under hot water and dry off.  Once carrots are soft, add all into the pan along with the green onion and bean sprouts.  Cover and let simmer for 5 minutes and the meal is done.

I love things that are quick and easy.  Ok..enough with the stir fry.  This weekend is the Christmas Holiday, so that means most of you will be eating out, so next week will probably be something on the light side.
