Spinach/Feta/Tomato Wonton Wrappers

Ingredients:

  • 1 package Wonton Wrapper, usually comes in a pack of 24
  • 5 Roma Tomatoes
  • 1 bag Fresh Spinach
  • 6oz package of Feta Cheese, any flavor you like
  • Few Cans of Unsalted Tomato Sauce
  • Parmesan Cheese
  • Red Pepper

Spinach/Tomato/Feta Wonton Wrappers

You will need to chop up spinach and place in bowl. Chop up the tomatoes and place in the same bowl as the spinach and then combine the feta cheese. Check the nutrition label for calories per serving and add as much as you like. Mix all ingredients together. Now, if you own some type of chopper or food processor the chopping takes seconds. You will need a rack to place the completed stuffed wontons on. You can stuff the wontons one of two ways.

Grab one wonton and place a scoop of the mixture in the center. Grab another wonton and place directly on top of the mixture, lining up the corners of the first wonton. Wet your fingertips with water and press the edges together to seal the wonton. You can get fancy and use a fork to press the edges together after wetting with water. Place the finished wonton on the rack.

The second option is to use one wonton and place a small amount of the mixture in the center of the wonton. Fold on edge over to form a triangle, wet your fingertips and seal the wonton. Place the completed wonton on the rack.

Put a pot of water on the stove and get it to a boil. Turn the heat down to medium and place individual wontons in the pot of boiling water and be careful not to crowd the pot. Boil for about 15 minutes or when they begin to float to the top. You will need to watch them because if they boil for too long they will break apart.

While the wontons are boiling, grab another pot to pour the tomato sauce in or you can put it in a microwavable dish and cook long enough to warm.

When wontons are finished cooking, place them on a serving plate. From the tomato sauce, only grab the tomatoes not the juice because they will become watery. Put as much sauce as you like on the wrappers and sprinkle some parmesan cheese on top. Dinner is ready!

In terms of serving sizes, pay attention to the nutritional chart of the wrappers and tomato sauce.

A few comments about working with the wrappers. If you don’t have patience, this might not be the dish for you. The wrappers are funny to work with. Some things to keep in mind:

  • Try not to press too hard to seal the edges because you will tear the wrapper. If it tears, just use another one because it will be a mess in the pot.
  • Try not to lay the stuffed wonton on top of each other, because they will stick together and you will not be able to get them apart.
  • You can freeze the stuffed and uncooked wontons. Again, put them on a rack and freeze them then transfer to a freezer bag.
  • Make sure you drain them well when you remove them from the boiling water, unfortunately one at a time, because they will stick together and the presentation will be horrible.
  • Make sure you watch the wontons, because if they over cook they will break apart.

Fitness Contest

I am certainly going outside the ballpark. November and December were filled with various chocolates, cakes, cookies, cupcakes, donuts, etc. I resisted as long as I possibly could and temptation got the best of me. I had decided toward the end of December to cleanse the month of January and stay away from sweets January through March. If you knew how much I love chocolate, this was going to be tough. On top of continuing with my gym routine.

On December 27th, I received an email from Bodybuilder.com about a 12 week contest. I clicked open the email and thought this is right up my alley and I decided at that moment I was going to go for it. If you get a chance, check out their website and take a look at the contest. You have until January 31st to submit your entry. I am going to reserve future posts on how my training is going, what I’m eating and how I am training. Before image shots will be coming soon.

Whatever your fitness goal for the new year, go big or go home. I use that line for just about everything!
