My Lite Bites

Week 5: Still feeling as if I have a chance to be one of the winners in this contest. I’m almost getting bored of the strictness of the program, but that’s when you have to dig deep and stay the course. I am still eating about 4 to 5 meals a day. Some mornings when I wake up it feels like my stomach is stuck to my spine, which can only mean one thing..I’m losing weight. With that being said, I am keeping with most of the meal plan. I switched the breakfast, lunch, and dinner. Well, the only thing left intact was the mid morning and afternoon snack. For lunch, I ate whole wheat spinach and cheese ravioli with chicken and used no salt added tomatoes for the sauce. For dinner, I had Tilapia with vegetables. For breakfast, I stumbled upon a great and tasty Fire-Roasted Red Pepper and Spinach Egg Muffin (Muscle & Fitness Hers, Jan/Feb 2012)

Egg Muffins

Calories: 77, Ttl Fat: 0, Carbs: 3g, Protein: 15g, Per Srving

Ingredients

  • 18 Egg Whites
  • 9 tblsm nonfat cottage cheese
  • 3 tspn chili powder
  • 6 tspn green salsa
  • 1 1 1/2 tspn Ms. Dash Fiesta Lime Seasoning
  • 1 12oz jar of Fire Roasted Red Peppers/li>
  • 3c Spinach Leaves
  • Red Pepper, as much as you can stand

Egg Muffin

Set oven to 350. Pour egg whites into a bowl and add the cottage cheese, Mrs Dash, and salsa. Set aside and chop spinach, and seed and cube peppers. Coat a muffin tray with cooking spray and pour even amounts of the egg mix into each cup. Distribute spinach and red peppers between cups. Stir each cup gently so that you coat the vegetables. Bake for about 20 minutes or until eggs are firm to the touch.

You can eat the egg muffin by itself. Its fantastic and full of flavor. Or you can try making your own Egg McMuffin. I used a multigrain Thomas English Muffin at 100 calories. So my trick is to keep all meals under or at 300 calories.

Fitness Contest

Week 5 and I am down to 126.5, nothing too exciting as I have recently been hear before! This week, I tried to start a new gym routing while signing up for Foundation Crossfit classes. That did not work out as I had planned. I was alternating days, one at the gym, the next at Crossfit and so on and so forth. Well, what I worked out at the gym, I worked out in CrossFit that meant over worked muscles. Not Good. So I gave up gym workouts and focused on CrossFit. Here is a short and sweet video about Crossfit. I think I have found something else to be passionate about. I have also decided this weekend to sign up for the Spartan Challenge. Sometimes its best to just do it. If you think too long and hard about something it may just never happen!
