My Lite Bites

Week 8: It has been a hell of a week! I’ve been on the go go go and when Friday came around, I was exhausted and sore. I think I owe you folks another recipe. It occurred to me that I may have given you the Chili recipe twice, one with less beans to reduce carbs. So I will give you two this week. I have switched things up once again. Since joining CrossFit, I have been doing some research as far as what meal plan folks usually follow. The two that came up frequently are Paleo and Zone. I have been on Paleo before, albeit for a short time, and do not know much about the Zone Diet. So I decided to return to Paleo and learn a little bit more about it. In honor of Paleo, I did try two recipes, one I am familiar with and the other one was new to me.

Sloppy Joes

  • 1lb package Jennie O Turkey Store Extra Lean Ground Turkey or Lean Grass Fed Beef
  • 1 medium size red onion, minced
  • 1 medium sized green pepper, minced
  • 1 tspn Dry Mustard
  • 8oz Can of Tomato Sauce, not salt added

Sloppy Joes

Brown ground beef/turkey. When it is almost finished cooking add the green peppers and onion. Continue cooking until the onions are translucent and green peppers are soft. If you see grease at the bottom of the pot, you might want to drain the excess. Return back to the pot and add the remaining ingredients. Cook covered for about 20 to 30 minutes. Now I like my sloppy joes sloppy, so if you like it more saucy then add more cans of tomato sauce. I have no bread options at the moment, so I just ate it out of the bowl.

The second recipe is for pancakes. They are different and will take some getting use to.

  • 2 Eggs
  • 1/2c Unsweetened apple sauce
  • 1/2c Nut Butter, not peanut butter
  • 1/4 tsp cinnamon
  • 1/4 tsp Vanilla Extract
  • Coconut Oil


Mix all ingredients except oil and stir well. Put pan on low to medium heat. Add oil and drop batches of mixture into the pan. You can use pure maple syrup or dress with fruit toppings. I did have a moment and thought, ‘boy I would kill for some fluffy buttermilk pancakes”. Pair it with some uncured bacon and you have breakfast.

Now I was not fully prepared for what I was going to eat throughout the day, so I had fruit, Raw Revolution Bars and protein shakes on hand for when I got hungry. Hopefully I will plan a little better next week with more options.

Fitness Contest

Yes, I am still in the BodyBuilding contest and I am still working toward my weight goal. Unfortunately, I have not been able to stabilize the fluctuation of my weight. I am still holding at 128, far from my goal of 115. This past week, I did CrossFit in the afternoon and cardio at night. By Wednesday, I was popping aspirin until Friday because CrossFit has been kicking my you know what. I love it. My body is probably in shock. I know I am mentally drained, but I’ve just started. It is a bit annoying to be the ‘new girl’ in group because I am posting the highest completion times. Yes, being to hard on myself but I hate to be last. I did try a 5am group class last week and it felt great, so I will try 5am sessions for awhile.
