My Lite Bites

Week 10: I have been sharing that granola with everyone and they love it as much as I do. It is great as a sweet snack when I am looking for something. A staple in the kitchen for sure!

The weather was great this week so I took the show out to the grill. I didn’t make anything that fancy. I grilled a variety of Chicken Sausage from Whole Foods, some Hot Turkey Sausage, Salmon, Tilapia and a bunch of vegetables. I know it sounds like a lot, but it was enough for lunch, afternoon snack and dinner.

For the vegetables, I roasted a colorful array of peppers, onions and asparagus. I did make a Tahini sauce to pair with the vegetables and once again..amazing! Another staple this summer for sure.

Tahini Sauce

  • 1/2 c of Tahini, unsalted
  • 2 to 3 garlic cloves, minced
  • 2 tbspn EVOO (Extra Virgin Olive Oil)
  • 1/4 cup fresh lemon juice, or you can use bottled
  • dash of sea salt

Tilapia, Grilled Veggies and Tahini Sauce

Combine Tahini and garlic in a food processor or Vitamix, if you have one, and process for about 3 min. Remove ingredients into a bowl and add the olive ol and lemon juice and mix well. If your consistency is too thick add a teaspoon of water to loosen it up. The meal was nice and light yet filling.

I seasoned the Tilapia with lemon pepper seasoning and the Salmon with Mrs. Dash Salt Free Lime Fiesta Seasoning.

Fitness Contest

The pressure is on..a few weeks left and I am happy to say that I see a 125 on the scale. Need to get it down to 115. I feel as though my eating is on point so I am going to kick up the cardio for the up coming weeks. Or, an additional Crossfit class on Saturday might just do the trick.
