Jeri’s Corner: Fitness and Food

My Lite Bites

I decided to dust off my pressure cooker and my George Foreman to make this dish, Pork Tenderloin w/ Artichoke and Asparagus wrapped in bacon. I didn’t really season the meat. I placed the pork loin in the pressure cooker, poured a 14oz can of Artichoke and 1 can of low sodium chicken broth and let it cook. For the Asparagus, I purchased one bunch and a package of bacon. Pulled out the George Foreman and used the grill plates. Wash the Asparagus and cut off the bottoms and place in a bowl. Sprinkle with a little olive oil, salt and pepper. Grab three pieces or more of Asparagus and one slice of bacon and wrap. Place on the grill until bacon is cooked.

Spartan Race

A couple things happened to me, so I will start with the Spartan Race. There truly are no words for the event. It was definitely more than I expected to be. I will say that it did not start off well. The first obstacle were three mud pits. I jumped and fell short and in the mud I went and I lost my shoe. So while I watch my group heading off into the sunset, I fished around for my shoe. Luckily, I was able to catch up with some of the members after the 1/2 mile walk up and down and hill with a 100lb backpack. That means I made great timing! I can say that the Spartan Race was all about mud, climbing in it, crawling in it, jumping over it and walking through it! My ankle held up pretty well until I lost my grip on the monkey bars and came down on the bad ankle. Needless to say I finished the race in 2:15. It was a great day working hard with a great group of people!

The second thing that happened, another injury in Crossfit. I was trying to deadlift too much weight and did something to my lower back. It’s been a week and I’m still sore. The biggest problem with me is I can not stand to sit still. So I have been slowly get back into the gym and keeping it light. If I could just sit still, I would probably be healed..both the ankle and the back.
