My Lite Bites

I was looking for something different to remake this week. How about Eggplant Parmesan and paired got it a salad. It has to be good to eat all week! The difference this time around is that I made my bread crumbs and paired it with Seasoned Panko Breadcrumbs. I used Ezekiel Bread for the breadcrumbs. I thought about dusting off my VitaMix but I used my Bullet hoping it would work and it did.

Eggplant Parmesan

  • 1 medium Eggplant
  • 1/2 cup Egg Whites
  • 1/2 cup Breadcrumbs (homemade) or other
  • 1/2 cup Panko Seasoned Breadcrumbs
  • 2 Jars, Marinara Sauce, organic, low to no sodium
  • Cooking Spray
  • Small package of Mozzarella Cheese and Parmesan Cheese
  • Fresh Basil, optional
  • Red Pepper, optional

Eggplant Parmesan

Wash the eggplant and slice into rounds, about 1/4 or smaller. I sliced just under that so that it would appear as though I could eat more. Place the sliced eggplant off to the side. Place egg whites into one bowl. Grab a second bowl and put both types of breadcrumbs into it. Spray baking sheet with cooking spray and set oven to 425. Grab an eggplant slice, dip it into the egg whites then into the breadcrumbs and place onto the baking sheet. Do not crowd or overlap the baking sheet. Place in the oven and flip over after 10 minutes or when the breadcrumbs brown. While the eggplant bakes, grab a deep dish pan/stoneware large enough to fit all the eggplant and place enough marinara sauce to cover the bottom OR you can grab a slow cooker and place the sauce at the bottom of the dish. When the you are done baking the eggplant rounds place them in the dish. After each layer, add a little more sauce to cover and sprinkle in some red pepper, mozzarella cheese and parmesan cheese. Continue adding layers until you are complete. If you decided to use a slow cooker simmer on low all day until dinner time. If you are finishing off in the oven, bake at the same temp for 15 to 20 minutes. Add Basil on top before serving.  Hope you enjoy it as much as I did!
