My Lite Bites

It has been hot outside so it is time to hit the grill.  Really, when is it not time to grill in the summer time?  Looking for something familiar, fast and healthy?  I decided to go with Sausage, Peppers and Potatoes.  No buns needed unless you want the extra calories.

Sausage, Peppers and Potatoes

  • As many sausages you like, Chicken and/or Turkey would be my recommendation. Again, the choice is yours!
  • 6 peppers in total. Make it colorful.
  • 1 White Onion
  • 2 Large Russet Potatoes. This was my second best option because I could not locate any sweet potatoes.
  • 2 tablespoons of Olive Oil
  • Salt and Pepper to taste

Sausage, Peppers and Potatoes

First, fire up the grill and let it heat.  While the grill is heating up, was all the peppers and cube the peppers and onions.  Place them in a bowl and use 1 tablespoon of the Olive Oil and stir to cover.  Set the bowl to the side.

Scrub the potatoes and slice them in rounds about 1/4 of an inch.  Place them in a bowl and add 1 tablespoon of Olive Oil in the bowl.  Stir to cover.

The grill should be ready so depending on the size of the grill you may be able to put all of this on the grill.  You will also want to use some type of vegetable holder to cook the peppers and onions.  The potatoes will be fine to place on the grill until they are cooked.
