My Lite Bites

It’s bad enough that the temperature in Colorado Springs has been in excess of 90 degrees, but I had to go and turn up the heat!  Craving the jerk seasoning on something, I decided to try it on shrimp and paired it with a side salad.

Jerk Shrimp

  • 24 Large/Jumbo Shrimp or any size
  • Pinch of brown sugar, I used Organic Sucanat
  • 1 tblsn of Hot Paprika, I found this and many other spices at a Spice Shop. If you don’t have hot you can use the regular.
  • 1/2 tspn Garlic Salt, Red Pepper
  • 1/4 tspn Ground Thyme
  • 1/8 tsp ground allspice
  • 2 tblsn Olive Oil
  • 1 tblsn Hot Jerk Seasoning (Spice Shop), optional
  • 2 or 3 Fresh Limes, to squeeze over cooked shrimp

Jerk Shrimp

Mix all the spices together in a bowl. Wash off the shrimp and put them in a bowl. Use the two tablespoons of olive oil and drizzle over the shrimp. Lightly toss to mix oil on the shrimp. Take your shrimp, one by one, and dump in the spice mix and thread onto skewer.

Prepare the grill and add cooking spray to the grate to prevent sticking. Once the grill is hot, place the shrimp skewers on the grill and about 5 to 7 minutes later, the shrimp is ready to be eaten! Once you take them off, cut a lime in half and squeeze lime juice over them. I hope you enjoy this light, hot, summer meal.  Note: For you Paleo friends, just opt out of using the pinch of brown sugar.

I am enjoying Crossfit so much, I am now considering going after a Level 1 Certification in Crossfit! I hope you were able to checkout or even volunteer at the Crossfit Games a few weeks ago! Amazing stuff.
