My Lite Bites

This week I prepared something I have always been afraid to cook and I don’t know why, Ribs. I figured I would give my pressure cooker a try and see just how easy they would be to cook. I made my own rub and marinated two racks of pork ribs for two days and they turned out fabulously. I will never have to order them frozen from Corky’s again! After this success, I will have to try Asian Style ribs.

Spicy Rub

  • 1/4 c Chile powder
  • 1 tblspn ground black pepper
  • 1 tblspn of Hot Paprika
  • Pinch of brown sugar, I used the organic kind
  • 3 tblspn Red Pepper Flakes
  • 2 tspn Garlic Powder
  • 1 tspn Dried Thyme
  • 1 tspn Onion Powder
  • 1 tspn Cajun Blackening Seasoning, extra hot

Mix all the spices together in a bowl and set aside. I used pork ribs but you can use what you like. Wash and peel the membrane off the back. Cut the ribs into groups. I cut every fourth rib. Place the ribs onto a flat cooking sheet or a bowl and apply the rub on both sides. If you are unable to marinate for a few days, I would go for at least 5 to 6 hours.

Once ribs have been marinated, coat with your favorite barbecue sauce. Add 1 cup water to the pressure cooker and place the ribs standing up into the pressure cooker. Add 1/2 cup of your favorite barbecue sauce. Seal the lid and cook the appropriate time for your pressure cooker. For mine it was 20 minutes. I let the pressure naturally release, this took about 15 minutes.  In the last 5 minutes, I turned the grill on so that I could give them the ‘grilling’ look. Only for 10 minutes or so and I applied more barbecue sauce. They look and tasted great! Nice job on my first attempt. What do you think?

To turn this into Paleo, remove the pinch of brown sugar, barbecue sauce and add 1/2 cup of additional water in the pressure cooker to replace the barbecue sauce.

You can pair this with your favorite side.  For me, it was coleslaw.

I am happy to say that my weight is still holding at 124, thanks to Weight Watchers and Crossfit. There are still some area’s in my eating habits that I can clean up and will attack that this week.
