My Lite Bites

OK, I had to use up the remaining spicy mix from the Jerk Shrimp that was posted on July 22nd. I used it on Tilapia and it was just as good as the shrimp. The dish was paired with steamed spinach, tomato, mozzarella and corn on the cob. I love Farmer’s Markets. The tomatoes were semi firm, bright red, and delicious. The corn was bright yellow and extremely sweet. The fish and corn were prepared on the grill.

I used eight Tilapia fillets, washed them off and applied the rub. Onto the grill they went along with the corn. While that was cooking I sliced up the tomatoes, and cubed the mozzarella. Added a little drizzle of olive oil and that was it.

You can season as you like, but I prefer foods in as close to their natural state as possible.  Enjoy!

Final weeks of Crossfit are winding down. Back to the gym with new skills and knowledge to hopefully share with others. I know now that I can lift heavier than I every have. The thought of becoming a Crossfit Instructor has not changed. It’s just been put on the back burner until some other things are settled. What have you done to improve your performance?
