My Lite Bites

Back from a great vacation in Chicago. Wow, did I eat a lot. The strange thing is that I missed Chicago Style Pizza the most and I managed to bring back five slices of pizza. Unfortunately, they do not ship frozen so I had no choice. I will guard them like fine jewels. In one way I am glad to be back so that my stomach is not above the full line. The taste this week was for something quick and light, Chicken Caesar Sandwich.

Chicken Caesar Sandwich

  • 1 lb Chicken Breast
  • 1 bag of roll size buns, wheat or multi-grain
  • 1 bag of Lettuce or bunch of red leaf lettuce
  • 1 bottle of Caesar or Asiago Dressing
  • 1 bag shredded Parmesan Cheese
  • 1 bottle of Italian Seasoning

To prepare the chicken, I used my pressure cooker because it took about 12 minutes or so. The chicken is extremely tender and I was able to shred the chicken breast apart. The chicken can also be prepared in the oven or slow cooker. I did not add any seasonings to the chicken while it was cooking. Once the shredding was complete, I added 1/2 cup of the dressing and 1 tablespoon of the Italian Seasoning and mixed it in with the chicken. Grab a bun and slice it. Add a little more of the dressing to the top of the bun, sprinkle a little shredded Parmesan cheese, add about 4 oz. of the chicken, slice a tomato and add some lettuce and you have a mini sandwich. I paired it with some steamed spinach and artichoke hearts. An unusual pairing, but it was left over from some hummus I made a week prior.

Caesar Chicken Sandwich

These mini sandwiches are great as an appetizer!
