Jeri’s Corner: Fitness and Food

I love stuffed peppers.  It has been quite some time since I have prepared these.  No better time than the present to get them out there for you to enjoy.  I made some modifications to make these Paleo friendly.

Stuffed Peppers

    • 4 Stuffed Peppers, colorful peppers are great for presentation
    • 1 lb lean ground meat, can be Italian, Pork, Turkey, Beef, Bison or a combination of all or some.
    • 2 8oz. cans of tomato sauce, no salt added
    • 1 6oz. can of tomato paste
    • 2 bulbs of garlic minced
    • 1 tablespoon of crushed red pepper, or as much as you can stand
    • 1/2 medium onion
    • Salt and Pepper to taste
    • 1 tablespoon Italian Seasonings

Preheat oven to 375. Wash the green peppers, slice lengthwise and clean the seeds and ribbing out then set aside. Chop the onion and garlic. Combine with the meat of your choice and add in remaining ingredients. Grab a pan long enough to hold the eight halves of peppers and place inside. Measure 4 oz of mixture and place inside the pepper. There should be just enough for each pepper. If there is mixture remaining, divide evenly amongst all eight peppers. Cover with aluminum foil and place in the oven for 60 minutes. During the last 10 minutes remove the foil. For those looking for a little bit more, add 1 cup of cooked rice to the raw meat mixture.

I actually used an additional can of tomato sauce to spread on top before I placed in the oven and sprinkled some Italian seasoning on top. If you want to add some mozzarella to this, just sprinkle a little on top when the aluminum foil comes off.
