Chicken Rice Soup l Jeri’s Corner: Fitness and Food

Lemon Chicken and Rice Soup is what I was craving this week.  It is starting to get cold outside and I was not ready for chili just yet, but that is coming soon.  The best part is that I made it in my pressure cooker and it only took 16 minutes.  Love this kitchen appliance to death.  If you do not have one, you should seriously consider adding this to your kitchen.  No fancy ingredients needed for this meal.

Lemon Chicken and Rice Soup


  • 1 pound of skinless chicken, breast or thighs
  • 1 small bag of mini carrots, not shredded
  • 2 celery stalks, sliced
  • 1 1/2 cups of low sodium chicken broth
  • 1/2 cup lemon juice
  • 1 cup wheat wild rice
  • 1 teaspoon Lemon Pepper Seasoning

I only added salt to the individual bowl, not the entire mixture.  I have a 5 quart pressure cooker.  Add ingredients in this order: liquid, rice, chicken (whole), carrots, celery and seasoning.  Set the cooker for 15 minutes or what is recommended for your cooker.  When the timer goes off let the pressure release naturally.  Once you release, take a fork and break up the chicken and your soup is ready.

A pressure cooker is great if you are short on time and need a make a quick meal.  Thus far, I have prepared macaroni and cheese for work functions and they love it.  That took 7 minutes to prepare.  I have also cooked beans for humus.  I will be experimenting more and will gladly share with you.
