I trust those of you who were in charge of the menu for Thanksgiving took plenty of time to create a masterpiece!  I did not have the opportunity to return home to join my family and visit close friends, but I did prepare a Clean Eating Thanksgiving dinner.  Opting to do things a little differently this year, I took a page from my favorite magazine that happens to be Clean Eating.  The finished product could have fed 6 people, but there was only me.  All week I have been having Thanksgiving everyday!  Some thought I was crazy, but leftovers are the best.

Thanksgiving Dinner by Clean Eating – Nov/Dec 2012 Issue

Whole Wheat Dressing, Lemon Cranberry Sauce, Butter Leaf Salad and Macaroni and Cheese, from the May/June 2009 issue.  The turkey was seasoned with lemons and fresh herbs.

The only thing I was missing was the table of desserts at my parents house.  My usual M.O. is to take a goody bag of slices of pie, cake, cheesecake and whatever else is on the table.  My dessert was an apple crisp made in the crock pot using my homemade granola.

Delightfully paired with Pumpkin Pie Ice Cream.

I was happy when the gym opened up the day after Thanksgiving.  Lot’s of running and HIIT.
