Healthy Greek Salad

I’ve been dining at Panera Bread for a few days now eating the Greek Salad.  It is a good salad, however I am not a big fan of Iceberg lettuce and I wanted a side of grilled chicken.  I decided to make my own just the way I like it.

Greek Seasoning

You will need this to season the chicken and for the salad dressing.  I tried to find this at the grocery store but could not.  So, I made my own and everything I needed was in my cabinet!  I could have saved myself time from running around trying to find this seasoning.

  • 1 1/2 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon minced onion
  • 1/2 teaspoon minced garlic


Greek Salad

  • 4 Organic Chicken Breasts
  • 2 bunch Romaine lettuce, rough chopped
  • 1 container cherry tomatoes, cut in half
  • 1 cucumber
  • 1/2 red onion, thinly sliced rings
  • 1 jar Kalamata Olives
  • 1 jar Pepperoncini Peppers

Paleo Greek Salad Dressing

  • 1 cup White Wine Vinegar
  • 1/3 cup EVOO
  • 2 tablespoons chopped capers
  • 1 lemon, juice and pulp
  • 1/2 teaspoon sea salt
  • 1 teaspoon black pepper

Clean the chicken of visible fat.  Tenderize chicken and place chicken breasts in a Ziploc bag.  Add some of the salad dressing, enough to coat and toss in bag to coat both sides.  I marinated mine for 24 hours, but you can marinate for 4 hours.  After the marinade, grill the chicken or prepare as you wish.

While the chicken is being prepared, assemble the salad.  You can slice chicken in to strips and place on top of salad then add the dressing.  Enjoy!
