Healthy Chicken Salad

This chicken salad was probably the best one I’ve made in a long time. In most foods that I prepare, I pull in some of my favorites while adding something new. For this version, I used what I have learned about Paleo to make it even cleaner.

Staying Healthy Tip:  One thing that I truly enjoy doing is planning.  I plan my meals for the week to include breakfast, lunch, dinner and snacks.  This will help you stay the course of clean eating!  The trick is to make you meals so tasty that you would not want to cheat.

Chicken Salad Ingredients: (Use organic products where you can)

  • 1 container of Cherry Tomatoes
  • 1lb Chicken Breast
  • 1 Cucumber
  • 1/2 Red Onion
  • 3 Hass Avocados, quartered
  • 5 Slices of Bacon, cooked and chopped
  • Lemon Pepper Seasoning
  • Salt and Pepper to taste
  • Coconut Mayonnaise

 

Preparation:

Set oven to 350 degrees.  Wash and clean the chicken breast removing any visible fat and place in a baking dish.  Sprinkle both sides with the Lemon Pepper seasoning, cover with aluminum foil and put in the oven.  Bake for about 45 minutes.  Always check to make sure that the chicken is not pink in the center.  If it is place it back in the oven for 15 minute intervals.

While the chicken is baking, cook the bacon, rough chop it and set to the side.  Take the cucumber and slice it down the center.  Scoop out the seeds and slice thinly, then set aside.  Take the onion and cut in half and into thin slivers and place aside.  Take the cherry tomatoes and slice in half, then set aside.  For they mayonnaise, there are several Paleo websites that will provide a recipe for you.  Here is a link to Paleo Coconut Mayonnaise.

Once the chicken is finished baking, take it out of the oven and let it cool down.  Slice the chicken into pieces and put into a large bowl and place the tomatoes and onions inside the bowl.  Add about 2 to 3 tablespoons of Coconut Mayonnaise and mix it all up and refrigerate.  When you are ready to serve, sprinkle some of the chopped bacon and 1/4 of the sliced avocado on top and sprinkle with a little salt and pepper.  You can place it inside Boston Lettuce or just eat out of a bowl.  Another way to prepare this is to leave the cherry tomatoes out and serve the chicken salad in a hollowed out large tomato.
