What do you like to eat when it is hot outside? My preference is a salad. Not just any old salad but one with lots of fresh veggies paired with a homemade dressing. It can’t get any better than that and it is quick and easy to put together if you are short on time.

Healthy Cobb Salad

This is not a traditional Cobb Salad. I like to add the things I enjoy eating in a salad, so the egg is probably all that’s Cobb. Here is my version of a Cobb Salad. This is a great light meal for 5 people or 5 meals!

Tip: Prepare the dressing first at least 24 hours before use.

Salad Ingredients:
5 Tilapia Filets
3 Sliced Avocados
1 container of Cherry Tomatoes
2 Cucumbers
5 Hard Boiled Eggs
1 Red Onion
1 can of Black Olives, they can be whole or chopped
1 can of Artichokes

Salad Dressing:
I used an Oregano Lemon dressing from Good Housekeeping
1/3 cup Fresh Lemon Juice
1 Teaspoon Dijon Mustard
1/2 Teaspoon Dried Oregano
1/2 Small Garlic Clove, crushed
1/3 cup Extra Virgin Olive Oil

The original dressing recipe called for 1/4 teaspoon salt and 1/4 teaspoon ground pepper and I have left those ingredients out of this recipe.

 

Preparation
How do you like your Tilapia? Season it how you like. I used Lemon Pepper Seasoning and fresh lemon juice. I like to marinate most meat and fish for 24 hours. I like it to soak up as much of the seasoning as possible. Bake or grill the fish. Once it is done set it aside. On a serving platter you can begin to arrange the vegetables.

First, take the cherry tomatoes and slice them in half and arrange on the platter. Second, take the cucumber and slice lengthwise. Take a spoon and scoop the seeds out of the center, slice thinly and arrange on the platter. Third, slice your eggs thinly and arrange on the platter. Next, slice the red onion thinly and arrange on the platter. Arrange the olives and artichoke. Lastly, slice or rough chop the avocado and chop or leave as a filet the fish and add to the platter. Set the platter aside to prepare the dressing.

The quickest way to prepare the dressing is to add all the ingredients into a blender. You will add everything except the olive oil until all ingredients have been mixed well. Then begin to slowly stream in the olive oil. If the dressing is still a little thick, drizzle more olive oil until it reaches the desired consistency.

You can either have the dressing as self serve once your guests take their salad or you can apply the dressing to the entire dish and then present. You can also have the salt and pepper available for those who would like to add to their individual salad.

It is a refreshing and delicious Cobb Salad.
