Week 1 Food Diary – LuRong Paleo Challenge 2013

The meal plan this week was pretty simple to start. I image that as more time passes I will find more interesting, flavorful things to prepare.

Breakfast
This is a simple, easy breakfast dish made of sausage, egg and vegetables in a muffin cups. These do not require a lot of work.
Sausage, Egg, Vegetable Muffin Cups
Ingredients:

  • Up to 12 Eggs
  • 1/2 Pound Organic Pork Chorizo, it’s what I had on hand. You can use the sausage you like, remove the casing.
  • 2 Diced Peppers, seeded. Again, what I had on hand were yellow and orange peppers.
  • 1/2 Red Onion, diced
  • salt and pepper to taste
  • Basil for garnish
  • A muffin pan

Oven 350 degrees.Saute the sausage and onions together on the stove top then set to the side. Add the diced peppers and saute until slightly soft. In a bowl, combine the sausage and peppers together. Take the muffin tin and add the meat mixture to the bottom of the muffin cup. Be extremely careful not to overload the muffin cup because you will still have to add the egg. You can try to add the meat mixture and make a well in the center and add the egg. I would also highly recommend that you place a catcher under the muffin pan when you bake it. The mixture might run over in the oven. Cook until the egg is settled.

Lunch
Nothing too fancy. I had baked salmon, steamed broccoli and a little sweet potato.

Again, nothing too fancy. Your basic salad with grilled Greek seasoned chicken and Basil Lime Dressing , just leave out the Stevia.

Just for fun, I tried making a pizza crust out of cauliflower. I am going to try making it again, so I hesitate to post the recipe until I can get it right. My first time making it was ok. I just could not wait until it cooled off because I was hungry. I just used the other half of the sausage and onion mixture from breakfast. Stay tuned for this one!
