Week 3 Food Diary – LuRong Paleo Challenge 2013

This week I went back to an old favorite and two new recipes.

Breakfast
I made a big batch of this Pumpkin Granola, sliced 1/2 of an apple and some coconut milk.

Lunch
Flank Steak and Zucchini in Alfredo SauceWell I just received my copy of Paleo Magazine Oct/Nov 2013 issue. As I was flipping through the pages, I came across this amazing Reversed Marinade Flank Steak that I had to try. I am unable to list it, but if you can get it as a hard copy or get the digital version and you will not be disappointed.

I paired it with another amazing recipe I found for Creamy Vegan Alfredo Sauce. I used my GEFU Spirelli to turn my zucchini into noodles. This was a fabulous meal and I would highly recommend for a dinner party.

Dinner
I made a big thing of sauteed spinach and had that with the steak. A pretty good, clean and easy week.

Something Extra
Cauliflower Pizza CrustMy second try at pizza using a different recipe for Cauliflower Pizza Crust. I like this recipe much better and will try it one more time to make real pizza sauce and some other toppings I would normally eat to validate the crust. I will then be able to reveal the recipe.
