Week 6 Food Diary – LuRong Paleo Challenge 2013

Ok, so I have been a little light with trying new dishes for breakfast, lunch and dinner the last couple of weeks. I went all out this week.

Well this was interesting. I am not sure that I liked mixing fire roasted tomatoes with sweet potatoes. All in all it was a different taste for me. It wasn’t bad and it wasn’t great. I made a small modification, which was to use a fried egg instead of nesting in the hash.  The recipe I tried came from Paleo Prize.

I was looking for ideas about different ways to prepare lunch meat, other than with bread.  Bread is not allowed in the Paleo way of life.  I found a great book at the bookstore, Paleo Lunches and Breakfasts On The Go by Diana Rodgers .  I am not permitted to display the recipe, but it is a great book for lunch ideas.  The sauce on the turkey is hot sauce.

It is paired with Asian Coleslaw.  In my opinion, it is much better than regular coleslaw.

The recipe came from The Primalist. This would also go well with ribs. It smells and looks amazing!

Dinner

I was in the mood for Chili.

Ingredients

  • 1 lb Ground Beef
  • 1 Large Yellow Onion, chopped
  • 3 Garlic Cloves, minced
  • 2 Jalapeno, chopped – no seeds
  • 6 small peppers, red, yellow, orange – Chopped
  • 2 Zucchini, chopped
  • 1 small package of Shredded Carrots
  • 2 Tblsn Chili Powder
  • 1/2 Tblspn Ground Cumin
  • 1 Tspn Paprika
  • 2 Bay Leaves
  • 1 28 oz can Crushed Tomatoes

In a large pot, brown the ground beef or whatever type of meat you are using.  When the meat is almost done cooking add in the onions, peppers, carrots, zucchini and garlic.  Cook until the veggies are slightly soft.  Add in the remaining ingredients and simmer for 2 hours.  Before serving up a bowl of this healthy Paleo chili make sure to remove the Bay Leaves.
