Week 8 Food Diary – LuRong Paleo Challenge

This might seem pretty strange, but I made various types of seasoned chicken wings.  I had an idea that I would have a wings party so I took to my spice cabinet and the web in search or something different.  All of the wings were cooked under the broiler and were marinated for two days.  For my lunch and dinner, I paired it with a small salad.  The ingredients for all wings have been paired back to accommodate for 4 to 5 wings.  Provided below are the ingredients for 2 pounds of chicken wings.

Lemon Herb Chicken Wings

Slice the lemons in half and squeeze the juice and scrap the pulp into a Ziploc bag.  Add all the other ingredients into the bag.  Then add the chicken to the bag, zip it up and shake to coat all the wings.  Let it marinate for at least 6 hours or up to 24 hours.

 

Place the chicken on a rack and put under the broiler.  Check every 5 minutes until the skin starts to brown and flip.  That’s it.

This recipe was taken from The Foodee.

  • 2 Tbspn Olive Oil
  • 1 Tspn Turmeric Powder
  • 1 Tspn Ground Cumin
  • 1 Tspn Ground Curry
  • 1/2 Tspn Salt

Add all the ingredients into a Ziploc bag.  Add the chicken and move the wings around so that you coat them with the seasoning.  Let the chicken marinate at least 6 hours up to 24 hours.

 

Remove from the bag and place on a rack.  Place the chicken under the broiler and check every 5 minutes until the chicken starts to brown then flip them over.

The recipe was taken from Nomnom Paleo.  However, I did leave out the fish sauce and final preparation.

        • 1/2 Medium Onion
        • 2 Jalapeno Peppers, rib and seeds removed
        • 3 Garlic Cloves
        • 1/2 Cup Cilantro, lightly packed
        • Zest of 2 Limes
        • 1/4 Cup Fresh Lime Juice
        • 2 Tblsn Coconut Aminos
        • 6 pounds of wings vs 2 lb used for other ribs
      • 1-2 Tbspn melted fat of choice, I had bacon fat on hand

      Put everything into the blender and blend until everything is mixed and the sauce is green.  Here is where I changed the final preparation.  Pour the ingredients into a Ziploc bag and add the chicken.  Move the chicken around to coat them all.  Marinate in the refrigerator for at least 6 hours or up to 24 hours.  Remove from the bag and place them on a rack.  Place under the broiler and check every 5 minutes until the chicken browns then flip them over and do the same.

      My hot rub concoction.

      • 3 Tbspn Spanish Hot Paparika
      • 2 Tbspn Cayenne Pepper
      • 2 Tbspn Onion Powder
      • 1 1/2 Tbspn Rosemary
      • 1 Tbspn Ghost Pepper Salt
      • 1 Tbspn Hot Jerk Seasoning
      • 1 Lime

      Mix all the ingredients together and rub on each wing one at a time and place them in a Ziploc bag.  Slice the lime and squeeze the juice in the bag and scrap out the pulp.  Marinate for at least 6 hours up to 24 in the refrigerator.

      Take the wings out of the bag and place on a rack.  Place under the broiler and check every 5 minutes until they turn brown.  Then flip them over and do the same.

       

      I enjoyed most of the wings. I was not a fan of the Lemon Herb Chicken Wings but the other ones were great.  Now to work on finding a dipping sauce for the wings!
