Meatloaf is comfort food when it’s cold outside, not to mention that it is pretty damn easy to put together.  It is great for lunch and dinner.  You can pair meatloaf with something as simple as a salad. Pair your meatloaf with what you like.


My Healthy Meatloaf

1 lb Turkey and Beef (Mix what you like)

1 small Red Onion, diced

1 Red Pepper, diced

1/2c Shredded Carrots, chopped

2 Garlic Bulbs, minced

6oz can of Tomato Paste

1 Tablespoon Italian Seasoning

If you typically add salt to your meals, add it here.  Other recipes call for adding an egg or two with some type of flower or breadcrumbs for binding.  In general, I do not add this.  I can generally make a loaf without adding this and it holds up just fine.

Set Oven to 350 degrees.  In a skillet, saute the onion and green peppers until the onion is translucent and peppers are soft.  Once that is complete add all the ingredients into a mixing bowl and mix the ingredients up with your hands until you feel everything is combined.  Place into a loaf pan and shape into a loaf.  Open the can of tomato paste, using a knife spread the paste onto of the meatloaf. Sprinkle salt and Italian seasoning on top of the paste and bake.

You can certainly get fancy with your meatloaf and add other ingredients.  Fresh chopped herbs such as Basil and/or Parsley, cheddar cheese.  Use your imagination.  Or stuff it with mashed potatoes and spinach for a meal by the slice or something else.  Search to web to see what people are doing and create your own.  Try using muffin pans to cook the meatloaf in because they would be the perfect single serving size.

Depending on the two types of meat you use, cooking time will vary.  A good rule of thumb is cook for an hour or internal temperature is 165 and you are good to go!
